Hard cheese with a finely grained structure that breaks into slivers, barely visible small holes, white and pale straw colour. Its crust is hard and smooth, with 4-8 mm thickness, dark or golden natural colour, without artificial dye. On the surface is reported the clover, the word "GRANA PADANO" and marking fire.

MINIMUM MATURING PROCESS: 11 months. It has a cylindrical form, slightly convex thickness, flat faces, slightly rimmed, shape of the diameter from 35 to 45 cm, height from 22 to 26 cm, weight from 30 to 40 kg and it has fragrant aroma, delicate flavour, white/pale straw colour.
