A lot of companies will tell you they “think outside the box.” But that’s not us – we never actually fit in the box to begin with.

Founder Winston Shelton left GE in the late 60s because of his entrepreneurial spirit and a driving need to create something. He developed a pressure fryer for Colonel Sanders and the ability to franchise an entire system – the Collectramatic® continues to be a workhorse today.  He created a whole new class of cooking and holding equipment that others have copied, and the precision of CVap® remains unequalled. 

Headquartered in Louisville, Kentucky, Winston is a family-owned business with partners across the globe. We are in our fifth decade of cultivating innovation for the foodservice industry, with diversification in electronics and metal fabrication, as well.

We’ve always enjoyed the position of being just a little different in our approach. Some have even called us a cult. We don’t mind. In fact, we’re sort of proud of it.

  • The CVap (CHV) Cook and Hold Oven is essentially a Cook and Hold cabinet on steroids. It can do traditional “low and slow” cooking, but with more control and truly impressive yields. Includes a probe and versatile functionality: bake, braise, poach, confit, low-temp steam, roast, stage, hold, and there’s even a sous vide mode programmed into settings for increased precision. Available in full-size and half-size configurations. Also records and stores HACCP data.

    Notable new features include a USB/Audio port, Capacitive Touch Wheel control, and KitchenSYNC™ Near Field Communication protocol, enabling users to enter food product settings by waving or tapping a preprogrammed NFC Card near the sensor, eliminating guesswork and errors.

  • The CVap (RTV) Retherm Oven is the fastest-cooking CVap oven currently available. This retherm oven also has far greater versatility than others on the market: it can retherm, bake, braise, poach, steam, roast, hold, and there’s even a sous vide mode programmed into settings for increased precision.   • CVap (HOV) Holding Cabinets: there is a humidified holding cabinet, and there is CVap. CVap incorporates the precision of sous vide cooking with the ability to control how crispy or soft you want a food to remain while holding. These cabinets are available in a variety of configurations and can be used to hold hot foods for extended periods at just-cooked quality, and they can be used for proofing, as well. Best of all, they are perhaps the only holding cabinets in the industry that will record and store HACCP data that can be easily downloaded to USB.
