APICIUS is the hospitality divison of Florence University of the Arts that reinterprets the concept of hospitality and tourism in the international destination of Florence, where the cityscape is teeming with traditional and contemporary structures sought by people from all over the world. The institution firmly believes in the importance of a cultural approach to hospitality by examining the unique context of cities and countries in a global framework. Hospitality should and must be enhanced by the local culture of a city, and our position and interaction with the city of Florence has the goal of culturally educating those who visit through the hospitality industry. Apicius seeks to shape students who make dynamic, proactive contributions to the areas of hospitality in Italy during their studies and go on to become excellent professionals with the same impact in future destinations. Our 2-year professional career programs are offered in the areas of hospitality, culinary arts, wine studies, and baking & pastry. A 1-year master in Italian cuisine, 1-semester master in international baking and pastry, and a 9-week experiential learning in hospitality program are open to university graduates and working professionals. Students interested in shorter term programs may study in all of the above areas as well as nutrition and sports studies, food history and culture, and a myriad of additional academic departments whether on a semester study abroad or amateur short term basis. Students seeking to complete their undergraduate careers in culinary arts or hospitality management may apply for a degree in business administration offered by Southern New Hampshire University in collaboration with FUA (3 years in Florence, 1 year online or in NH).
