Since 1937 the Idaho Potato Commission has represented the growers, fresh shippers, and processors of fresh, frozen, dehydrated, and refrigerated 100% grown in Idaho potatoes. The commission is directed by nine commissioners, five of whom are potato growers, two are packers/shippers, and two represent the processors. We supply 30% of the nation’s fresh potatoes, mostly russets, but have expanded to include niche and heirloom varieties. The foodservice program concentrates on providing training and educational materials, recipes, and merchandising to a variety of foodservice institutions.
